Lemon Roasted Chicken
This chicken recipe is the bomb! It’s super quick, easy, delicious and Eat by Design approved!!
Serving size 2-4 (or 1 Dr. Joel)
2 Chicken breast or thigh (approx. 1.5lb)
2 Lemons, juice & zest
1 tbsp dried oregano
¼ bunch parsley, minced
1 tbsp olive oil
Salt & pepper for taste
Cover the chicken with the ingredients and marinate in the left over mixture for 1-2 hours, covered, in the refrigerator.
Lightly oil a roasting pan or baking dish and preheat oven at 350°F.
Roast the chicken for 35-40min, turning 2-3 times throughout. Cook until the meat registers at least 165°F in the thickest part of the chicken.
